Avocado Boats Recipe Is a Yummy Lunch Dish That Preps in Just 20 Minutes

We stuff a creamy tuna mix into ripe avocado halves for a light yet delicious meal

If you’re looking for a fun and tasty lunch option, try this recipe for Avocado Boats! They consist of avocado halves that are stuffed with a tuna, cucumber and tomato filling. This blend of ingredients creates a dish that’s both creamy and tangy with an herby kick thanks to fresh basil. On top of this, you get nice health perks as the fresh avocados are brimming with healthy fats that will satisfy your appetite.

For a lighter version of this recipe, swap full-fat mayonnaise for a low-fat variety when making the filling mixture. Once the filling is mixed together, you can cover the bowl with plastic wrap and refrigerate it for a few hours. This optional step allows the flavors to meld and makes the dish extra tasty after assembling the boats. Enjoy the avocado boats on their own or scoop them onto crackers or bread.
