This Flavorful Kale-Apple Salad Recipe Is a Fall Favorite

Making Salad for a Crowd? Here’s How to Keep the Apples From Browning 

If you’re whipping up this vibrant salad for a dinner party, you may want to prep it in advance, but you worry that the apples will turn brown. Fortunately, there’s a simple way to prevent that: Instead of tossing the salad together and covering until it’s time to eat, prep each element and store them separately. To keep apples pristine, slice them into wedges and place in a water bath with a ratio of 1 tablespoon lemon juice to 1 cup of water. Cover and place them in the fridge. When it’s time to assemble the salad, drain the apples and add them to the recipe as directed. Easy breezy!

Ingredients

  • 2 Tbs. apple cider vinegar
  • 3 Tbs. olive oil
  • 2 tsp. maple syrup
  • 2 tsp. Dijon mustard
  • 5 cups chopped fresh kale leaves, tough stems removed
  • 2 apples, cored, sliced into wedges
  • ¼ cup thinly sliced red onion
  • ¼ cup crumbled goat cheese

Instructions

In bowl, combine vinegar, oil, maple syrup, mustard, 1⁄4 tsp. salt and 1⁄4 tsp. pepper. Place kale in salad bowl; drizzle with half of dressing.

Using fingers, gently rub kale with dressing to tenderize leaves. Add apples and red onion. Drizzle with remaining dressing. Toss until evenly coated. Transfer to serving platter; top with crumbled goat cheese.
