When autumn approaches, the temptations of pumpkin spice and maple-flavored everything is in full force. But sometimes you crave a healthy fall bite. Our kale-apple salad recipe is just the thing, and it even has a hint of maple syrup for good measure. Tossed with a sweet-yet-savory vinaigrette and topped with apples, crisp red onion and crumbly goat cheese, nutrient-dense kale really shines in this tasty and nutritious side.

Making Salad for a Crowd? Here’s How to Keep the Apples From Browning

If you’re whipping up this vibrant salad for a dinner party, you may want to prep it in advance, but you worry that the apples will turn brown. Fortunately, there’s a simple way to prevent that: Instead of tossing the salad together and covering until it’s time to eat, prep each element and store them separately. To keep apples pristine, slice them into wedges and place in a water bath with a ratio of 1 tablespoon lemon juice to 1 cup of water. Cover and place them in the fridge. When it’s time to assemble the salad, drain the apples and add them to the recipe as directed. Easy breezy!
