That’s why First for Women test kitchen manager Susan Chiusano likes to mix equal parts melted butter and flour into a paste (she suggests starting with 1 Tbs. each). “Use a pastry brush to spread the paste onto the inside of the molds being sure to get it into the grooves,” she says. “It’ll form a crust as they bake so the cakes will slide out in one piece.”
