  • 4 avocados
  • 1 lemon
  • 1/4 cup mayonnaise
  • 1/4 cup chopped fresh basil
  • 1 mini cucumber
  • 1 tomato
  • 2 (5 oz.) cans solid white tuna in water, drained
  • 1/2 cup crumbled feta cheese, 2 oz.

Instructions

Halve avocados. Remove and discard pits; reserve avocado boats. Grate 1 tsp. zest and squeeze 2 Tbs. juice from lemon; transfer to large bowl. Add mayonnaise, basil and 1/4 tsp. pepper; stir until combined.

Dice mini cucumber. Halve tomato. Remove and discard seeds; dice. Add tuna, feta, cucumber and tomato to bowl with mayonnaise mixture; toss until coated and combined. Place avocado halves on serving plate. Dividing evenly, fill with tuna mixture.
