Ingredients
- 1 (1.8 oz.) leek recipe soup mix
- 2½ cups reduced-fat milk
- 1 Tbs. minced fresh thyme
- 2 lbs. baking potatoes, peeled and sliced ⅛”-thick
- ½ cup shredded low-fat cheddar
Instructions
- In pot, mix first 3 ingredients. Add potatoes; bring to a boil. Let simmer 10 min. or until just tender. Transfer to greased casserole; top with cheese.
- Cover dish. Bake at 400°F 50 min. or until done, uncovering during last 15 min. Let sit 10 min. before serving.
