Cheddar-Leek Scalloped Potatoes

Leek soup mix adds savory flavor to this creamy side dish — no chopping of extra veggies needed.

  • 1 (1.8 oz.) leek recipe soup mix
  • 2½ cups reduced-fat milk 
  • 1 Tbs. minced fresh thyme
  • 2 lbs. baking potatoes, peeled and sliced ⅛”-thick
  • ½ cup shredded low-fat cheddar


  1. In pot, mix first 3 ingredients. Add potatoes; bring to a boil. Let simmer 10 min. or until just tender. Transfer to greased casserole; top with cheese. 
  2. Cover dish. Bake at 400°F 50 min. or until done, uncovering during last 15 min. Let sit 10 min. before serving.
