Fast and Fresh Grilled Cilantro-Lime Corn Recipe For Your Next Backyard Bash

Now that summer is in full swing, farmer’s markets are overflowing with bushels of fresh corn. At my local stand everyone loads up bagfuls so I have to get there early to get the best pickings. But it’s worth it because in-season corn is so sweet and delicious. And this Grilled Cilantro-Lime Corn recipe is the perfect way to serve it up.

Boiling the ears is easy and sure, they turn out tasty. But if you’re firing up the grill to cook the main course, why not pop the veggie on the grates too? Grilling corn caramelizes sugars and gives the kernels bold smoky flavor. We whip up a compound butter with fresh cilantro, lime zest, scallions and cumin. The spice perfectly complements the herbs and citrus. Plus, it enhances the corn’s natural sweetness. Take one bite and we promise, you’ll never go back to boiling again.   • ¼ cup butter, at room temp.
  • 1 scallion, chopped
  • 2 Tbs. chopped fresh cilantro
  • ½ tsp. grated lime zest
  • ¼ tsp. ground cumin
  • 4 ears fresh corn, husks removed



Prepare grill for medium direct-heat cooking. In bowl, combine butter, scallion, cilantro, lime zest, cumin and 1⁄4 tsp. salt. Grill corn, rotating occasionally, until tender and lightly browned, about 10 min. Serve corn with butter mixture.
