California Grilled Cheese
The classic sandwich gets a tasty makeover with avocado and zesty sautéed onions.

Ingredients
- 2 cups thinly sliced yellow onions
- 1 Tbs. olive oil
- 1 Tbs. balsamic vinegar
- 2 Tbs. mayonnaise
- 2 Tbs. Dijon mustard
- 1 loaf (1 lb.) Italian bread, cut into 8 slices
- ½ cup sliced roasted red peppers
- 8 oz. sliced cooked turkey
- 1 avocado, pitted, peeled and sliced
- 8 slices Swiss cheese
Instructions
- Heat broiler. In skillet over medium-high heat, cook onions in oil 10 min. stirring. Add vinegar; cook 1 min.
- In bowl, combine mayonnaise and mustard. Place bread on baking sheet. Divide may mixture, onion mixture and remaining ingredients among slices. Broil 2 min., or until cheese is melted.
