California Grilled Cheese

The classic sandwich gets a tasty makeover with avocado and zesty sautéed onions.

  • 2 cups thinly sliced yellow onions
  • 1 Tbs. olive oil
  • 1 Tbs. balsamic vinegar
  • 2 Tbs. mayonnaise
  • 2 Tbs. Dijon mustard
  • 1 loaf (1 lb.) Italian bread, cut into 8 slices
  • ½ cup sliced roasted red peppers
  • 8 oz. sliced cooked turkey
  • 1 avocado, pitted, peeled and sliced
  • 8 slices Swiss cheese


  1. Heat broiler. In skillet over medium-high heat, cook onions in oil 10 min. stirring. Add vinegar; cook 1 min.
  2. In bowl, combine mayonnaise and mustard. Place bread on baking sheet. Divide may mixture, onion mixture and remaining ingredients among slices. Broil 2 min., or until cheese is melted.
