Easy BBQ Chicken Sandwiches Recipe Is A Deliciously Satisfying Lunch

Fresh coleslaw adds tang and crunch to these sammies

I love roasting a big juicy chicken on Sunday. I toss root veggies around the bird and simply pop it into the oven. It cooks all in one pan so clean up is a breeze. And the aromas that waft through the house fill everyone with anticipation of a delicious meal. Trouble is, my gang never finishes the entire chicken all in one sitting. This BBQ Chicken Sandwiches recipe a genius way to use up the extras to create a satisfying lunch.

To keep things simple, we use packaged coleslaw mix to make a crisp topping. Our easy barbecue sauce comes together in minutes. We combine cider vinegar, molasses, brown sugar, mustard, Worcestershire and tomato sauce. It has the perfect balance of sweet and tang but to save time you can sub in your favorite bottled brand. Ingredients

  • 3 cups packaged fresh coleslaw mix
  • ½ cup mayonnaise 
  • 3 Tbs. apple cider vinegar
  • 1 tsp. + 2 Tbs. packed dark brown sugar
  • 1 Tbs. olive oil
  • 1 small onion, chopped
  • 1 clove garlic, finely chopped
  • 1 (15 oz.) can tomato sauce
  • 1 Tbs. molasses
  • 1 Tbs. spicy brown mustard
  • 1 Tbs. Worcestershire sauce
  • 3 cups shredded cooked chicken
  • 6 Kaiser rolls, split

In bowl, toss coleslaw mix with mayonnaise, 1 Tbs. vinegar, 1 tsp. sugar, 1/4 tsp. salt and 1/8 tsp. pepper until well combined and saucy. Cover and reserve.

In large skillet, preferably nonstick, heat oil over medium heat. Add onion; cook, stirring occasionally, until starting to soften, 5 minutes. Add garlic; cook, stirring, until fragrant, 30 seconds. Add tomato sauce, remaining 2 Tbs. sugar, 2 Tbs. vinegar, molasses, mustard and Worcestershire sauce. 

Bring sauce mixture to boil; reduce heat to medium-low and simmer, stirring occasionally, until flavorful, about 10 minutes. Stir in chicken; heat through, 2-3 minutes. Fill rolls with chicken mixture and reserved coleslaw and serve immediately.
