Pre-cooked breaded chicken adds the ultimate crunch to this Tex-Mex salad.
1 cup zesty zesty citrus salad dressing, such as Maple Grove Farms
1 (1 oz.) pkg. fajita seasoning mix
1 (1.8 lb.) pkg. breaded chicken tenders
2 cups cooked white rice
1 cup halved grape tomatoes
1 cup sliced radishes
1 red onion, sliced
8 cups mixed salad greens
2 avocados, sliced
1 cup roasted bell peppers, sliced
- In bowl, combine dressing, 1 Tbs. fajita seasoning, 1 Tbs. lime juice and 1 tsp. lime zest; set aside.
- Sprinkle remaining fajita seasoning over chicken; prepare as package directs. Thinly slice chicken.
- In bowl, combine rice, tomatoes, radishes and onions. Place salad greens on serving platter; arrange rice mixture in pile in center of greens. Top with chicken, avocados and peppers. Garnish with fried tortilla strips and pepitas, if desired. Serve with dressing.
