Although boneless chops allow this dish to cook in just 20 minutes, you can use bone-in pork chops instead for extra moist and flavorful meat.
Bone-in chops are often thicker than the boneless variety, so they’ll need to sear for about 5 to 6 minutes per side. - 2 Tbs. olive oil
- 1 (9 oz.) zucchini, halved lengthwise, sliced
- 1½ cups cherry tomatoes, halved
- ½ cup sliced red onion
- 6 thin-sliced boneless pork chops (about 2 lbs.)
- ½ tsp. garlic powder
- 1 cup shredded fontina cheese
Instructions
In nonstick skillet, heat 1 Tbs. oil over medium-high heat. Add zucchini, tomatoes, onion, 1⁄4 tsp. salt and 1⁄8 tsp. pepper. Cook, stirring, until softened, 5 min. Remove. Sprinkle chops with garlic powder, ½ tsp. salt and 1⁄4 tsp. pepper.
In same skillet, heat remaining oil over high heat. In batches, cook chops, flipping once, until browned and no longer pink in centers, about 2 min. per side.
Heat broiler. Place chops and vegetables on rimmed baking sheet. Sprinkle with cheese. Broil until cheese melts, 2 min. Transfer to platter.
