Meatball Heroes Recipe: Hearty Sandwiches That Cook Up in Just 25 Minutes

Make weeknight dinner more exciting by whipping up this recipe for Meatball Heroes! The sandwiches consist of saucy homemade meatballs, melted cheese and a garnish of thinly sliced fresh basil. To save time in the kitchen, cook these tender meatballs a day in advance and allow them to cool before storing in the fridge. When it’s time for dinner, simply nestle the meatballs into hoagie rolls, top with tomato sauce and cheese and broil until hot. You can also use other types of meat like ground turkey for leaner meatballs. Or, try a mixture of ground beef, veal and pork for added flavor and moisture. Ingredients

  • 1½ lbs. ground beef
  • ½ cup Italian-style dry breadcrumbs
  • 2 eggs, lightly beaten
  • ¼ cup chopped parsley
  • 2 cloves garlic, minced
  • 6 hoagie rolls, split
  • 1½ cups tomato-basil pasta sauce, warmed
  • 6 slices mozzarella
  • Thinly sliced fresh basil

Instructions

• Combine first 5 ingredients; shape into 18 balls. Coat nonstick skillet with cooking spray; heat over medium heat. In batches, cook meatballs, turning occasionally, until browned, 5 min. per batch. 

• Return all meatballs to skillet; reduce heat to mediumlow. Cover; cook 15–20 min.

• Line rimmed baking sheet with foil. Dividing evenly, fill rolls with meatballs and sauce; top with mozzarella. Place on baking sheet. Broil until cheese melts, about 3 min. Garnish with sliced basil.
