Shaved Brussels Sprouts Slaw Recipe Gets an Easy Flavor Upgrade With Apple and Bacon

Ingredients

  • 6 slices thick-cut bacon
  • 1 Gala apple, peeled, cored, chopped
  • 1 shallot, chopped
  • 1 Tbs. packed brown sugar
  • 2 tsp. Dijon mustard
  • 3 Tbs. white wine vinegar
  • 3 tsp. apple juice
  • ⅓ cup olive oil
  • 6 cups shaved Brussels sprouts
  • 1 red onion, thinly sliced

Instructions

Coat nonstick skillet with cooking spray; heat over medium-high heat. Add bacon; cook, flipping, until crisp, 6-8 min. Drain on paper towels. Let cool; chop. Reserve.

In blender, puree apples, shallot, brown sugar, mustard, vinegar, apple juice, 1⁄4 tsp. salt and 1⁄4 tsp. pepper, gradually pouring in oil until smooth. Transfer to large bowl with Brussels sprouts and onion; toss gently until evenly coated and combined. Serve immediately or cover and chill. Garnish with reserved bacon just before serving.
