Shaved Brussels Sprouts Slaw Recipe Gets an Easy Flavor Upgrade With Apple and Bacon

A sweet apple-infused sauce with crispy bacon bits makes for a delicious 30-minute side dish!

This anything-but-ordinary shaved Brussels sprouts slaw recipe is the perfect crunchy side dish for lunch or dinner. We’re adding sweet and salty notes with crisp apple and smokey bacon. Made with thinly sliced Brussels sprouts, sliced apples, crispy bacon and white wine vinegar, you get a healthy and flavorful alternative to traditional coleslaw.   • 6 slices thick-cut bacon
  • 1 Gala apple, peeled, cored, chopped
  • 1 shallot, chopped
  • 1 Tbs. packed brown sugar
  • 2 tsp. Dijon mustard
  • 3 Tbs. white wine vinegar
  • 3 tsp. apple juice
  • ⅓ cup olive oil
  • 6 cups shaved Brussels sprouts
  • 1 red onion, thinly sliced


Coat nonstick skillet with cooking spray; heat over medium-high heat. Add bacon; cook, flipping, until crisp, 6-8 min. Drain on paper towels. Let cool; chop. Reserve.

In blender, puree apples, shallot, brown sugar, mustard, vinegar, apple juice, 1⁄4 tsp. salt and 1⁄4 tsp. pepper, gradually pouring in oil until smooth. Transfer to large bowl with Brussels sprouts and onion; toss gently until evenly coated and combined. Serve immediately or cover and chill. Garnish with reserved bacon just before serving.
