Creamy Bacon Corn Casserole

This delight can be prepped and frozen for up to three months — make a double batch for an easy future meal.

Ingredients

  • 8 oz. thin-sliced bacon, chopped
  • 4 eggs
  • ½ cup buttermilk
  • ½ tsp. paprika
  • 6 cups corn kernels
  • 1 bunch scallions, thinly sliced
  • ½ cup shredded sharp cheddar cheese

Instructions

  1. In pan over medium-high heat, cook bacon 10 min. or until crisp, stirring often. Remove to paper towel–lined plate; reserve 1 Tbs. bacon fat. 
  2. Heat oven to 375°F. Coat large casserole dish with bacon fat. In large bowl, whisk eggs, buttermilk and paprika. Add corn, scallions, cheddar cheese and cooked bacon. Season to taste with salt and pepper. Pour into casserole dish. Bake 30 min. or until set and golden brown. Garnish with parsley, if desired.
