Crispy Air-Fryer Fish and Chips

Crushed cornflakes are the secret ingredient in the crunchy coating our flaky cod.

Ingredients
- ½ cup low-fat mayonnaise
- 2 Tbs. sweet relish
- 1 tsp. lemon juice
- ⅔ cup cornflake crumbs
- ½ tsp. smoked paprika
- 4 (6 oz.) cod fillets
- ¼ tsp. salt
- ¼ tsp. pepper
- ¼ cup all-purpose flour
- 2 eggs
- 1 lb. red potatoes, cut into wedge
Instructions
- Heat 7-qt. air fryer according to manufacturer’s directions for air-fry at 325°F. Coat air fryer basket with cooking spray. In small bowl, combine mayonnaise, relish and lemon juice; reserve.
- In separate bowl, combine cornflake crumbs and paprika. Place flour in shallow bowl. In separate shallow bowl, lightly beat eggs. Sprinkle both sides of cod fillets with salt and pepper; dip in flour, then egg and crumbs. Transfer to air fryer basket. Coat fish with cooking spray; insert basket into air fryer. Cook fish until thickest part is opaque, 7-10 min. Serve with tartar sauce.
- For chips: Coat crisper plate with cooking spray. Place in basket in air fryer. Heat air fryer according to manufacturer’s directions for air-fry at 350°F. Coat potatoes with cooking spray; toss with ¼ tsp. salt. Transfer to crisper plate in basket. Cook until tender, 15-20 min., shaking basket halfway through.
