1 can (6 oz.) solid white albacore tuna in water
1 scallion, chopped
1 large radish, coarsely chopped
1 Tbs. chopped fresh cilantro
1 Tbs. olive oil
1 lime, zested and juiced
2 ripe avocados, halved and pitted
In medium bowl, combine tuna, scallions, radishes, cilantro, olive oil, 1 Tbs. lime juice and 1/2 tsp. lime zest. Season mixture with salt and cracked black pepper.
Peel avocados, if desired. Divide tuna mixture evenly among avocado halves. Garnish with thin strips of lime zest and chopped parsley, if desired.
