Eggs, bacon, hash browns: the breakfast dream team. Calm down, sausage lovers. You can substitute in your favorite breakfast meat for bacon. It’s hard to imagine how this early AM lineup could get any better--until this cooking trick came into our lives.
The problem with hash browns is that they’re a game of odds: What are the chances they’ll be evenly crispy with the right amount of crunch? About the same as that diner giving you extra bacon for free. Avoid soggy spuds by making hash browns at home in your waffle iron using--wait for it--tater tots.
Piling the tots into the waffle iron gives you the even crispness that’s so rare in the savory side dish, and you don’t even have to worry about flipping them. Simply let the potatoes cook until they’re golden brown. We highly suggest topping your hash brown waffle with eggs and bacon--but that’s just us. A quick squiggle of ketchup works just as well.
