This low-cal starter is super simple to prepare: Just whisk, slice, skewer and enjoy!
1/4 cup extra virgin olive *oil, *like Bertolli
1/4 cup white or regular balsamic vinegar
1 clove garlic, peeled and minced
1/2 tsp. ground mustard
Pinch of sugar
1 Tbs. chopped fresh parsley and/or basil
1 head iceberg lettuce
2 medium carrots, peeled and sliced
1 cucumber, sliced
1 pint grape or cherry tomatoes
1 pint mini mozzarella cheese balls
1. In bowl, whisk together oil, vinegar, garlic, mustard, sugar and parsley. Season with salt and coarse ground black pepper, if desired.
2. Cut lettuce into wedges, then into 1 1/2" cubes.
3. Alternately thread sliced carrots, cucumbers, lettuce cubes, tomatoes and cheese onto skewers. Serve with balsamic dressing.
