Complete with seasoned chicken, creamy avocado and crunchy veggies, this dinner salad delivers all the flavors you love in one bowl
1 cup zesty citrus salad dressing, like Maple Grove Farms
1 pkg. (1 oz.) fajita seasoning mix, divided
1 *lime, *zested and juiced
1 bag (1.8 lbs.) breaded chicken-breast tenders
2 cups cooked white rice
1 cup halved grape tomatoes
1 cup sliced** radishes**
1 red onion, sliced
8 cups mixed salad greens
2 avocados, sliced
1 cup roasted bell peppers, sliced
1. In bowl, combine dressing, 1 Tbs. fajita seasoning, 1 Tbs. lime juice and 1 tsp. lime zest; set aside.
Sprinkle remaining fajita seasoning over chicken; prepare as package directs. Thinly slice chicken.
In bowl, combine rice, tomatoes, radishes and onions. Place salad greens on serving platter; arrange rice mixture in pile in center of greens. Top with chicken, avocados and peppers. Garnish with fried tortilla strips and pepitas, if desired. Serve with dressing.
