We transformed boxed cake mix into a cocktail-inspired sweet sure to spark smiles. For a kid-friendly treat, omit rum.
1 (16.5 oz.) pkg.** white cake mix,** like Duncan Hines
3 Tbs. finely minced fresh *mint *
1 tsp. rum extract (optional)
1 (16 oz.) pkg. white frosting
2 limes, zested and juiced
1–2 Tbs. white rum (optional)
Green liquid food coloring
2 Tbs. coarse sparkling sugar
2. Prepare cake mix as package directs, adding minced mint and rum extract. Divide batter evenly among cupcake liners. Bake 18 to 20 min. or until done.Let cool completely.
3. Meanwhile, in bowl, stir together frosting, 1 Tbs. lime juice, 1 Tbs. lime zest and rum. Tint to desired color. Spoon frosting into pastry bag fitted with star decorating tip, like Ateco #843. Pipe frosting onto cupcakes. Sprinkle sparkling sugar over frosting. Garnish with lime slice and green striped straw, if desired.
