Earn raves at your next tailgate with these treats! A light-as-air filling of Neufchâtel cheese and whipped topping complements the hearty cakes and keeps them low in fat
1 (15.25 oz.) pkg. spice cake mix
1 cup pumpkin puree
1/3 cup low-fat milk
1 large egg
1 large egg white
2 Tbs. unsweetened cocoa powder
1 (8 oz.) pkg. Neufchâtel cheese
1 (8 oz.) pkg. whipped topping
3 Tbs. powdered sugar
1/2 cup melted white chocolate
Heat oven to 350°F. Draw 30 (3" x 2") football shapes on 2 sheets parchment paper; invert paper on baking sheets. With mixer on low speed, beat first 6 ingredients 30 sec. Increase speed to medium-high. Beat 2 min.
Drop 3 Tbs. batter in center of each football outline; spread with spatula to fill space, mounding batter in center. Bake 9 min. or until done. Let cool.
With mixer on medium, beat next 3 ingredients 1 min.; pipe onto flat side of half the cakes. Top with remaining cakes. Pipe laces with white chocolate.
