Have an abundance of apples and apple cider this time of year? These adorable cakes are the perfect use for them!
1/2 cup butter, at room temp.
1 (18.25 oz.) pkg. yellow cake mix
2/3 cup apple cider
3 large eggs
1/2 tsp. ground cinnamon
1/2 tsp. ground nutmeg
1 apple, peeled, cored and shredded
8 oz. marzipan or white fondant
Green and orange food coloring
1 (16 oz.) pkg. cream cheese frosting, melted and divided
4 oz. white chocolate, melted
1/2 pint fresh raspberries
2. In bowl, blend marzipan and green food coloring to create desired hue. Roll, cut and shape into leaves and tendrils; set aside.
3. In bowl, blend orange food coloring, frosting and chocolate to create desired hue; spread 1 Tbs. on cut side of 6 cakes. Top with remaining cakes. Fill centers with berries. Drizzle with frosting mixture. Top with leaves and tendrils.
