Thanks to a coating of extra-crunchy panko breadcrumbs, this fried restaurant favorite stayed crispy and delicious when we gave it a healthy makeover in the oven
1/4 cup light *mayonnaise *
1/4 cup light Thousand Island dressing
2 tsp. prepared horseradish
2 tsp. garlic chili pepper sauce
3/4 cup buttermilk
1 Tbs. seafood seasoning
3/4 tsp. cayenne pepper
2 sweet onions, peeled and cut through root into wedges
2 cups** panko bread crumbs**
2. In bowl, blend next 3 ingredients. Dip onions into buttermilk mixture; press into panko crumbs to coat.
3. Place wedges on rack set in jelly-roll pan; coat with cooking spray. Bake 35 min., turning once. Increase heat to 400°F. Bake 5 min. Serve with dip.
