It's finally grilling season! Light up a weeknight by making these flavor- and veggie-packed kebabs, ready in just 15 minutes!
1/4 cup** olive oil**
2 tsp. chopped** garlic**
1** lemon, **zested and juiced
2 tsp. salt
2 tsp. chopped fresh oregano
1 bunch chopped fresh** rosemary, **divided
1 1/2 lbs. boneless** leg of lamb, **cut into 1 1/2" cubes
2 small *zucchini and/or yellow squash, *cut into 1 1/2" pieces (about 8 oz.)
1** yellow and/or red pepper, **seeded and cut into 1 1/2" pieces
1. Heat grill or broiler. In small bowl, combine olive oil, garlic,
1 Tbs. lemon juice, 1 tsp. lemon zest, salt, chopped oregano
and 1 1/2 Tbs. chopped rosemary until blended.
2. In large bowl, toss lamb cubes with 3 Tbs. olive-oil mixture. Alternately thread lamb, zucchini and peppers onto metal skewers or rosemary sprigs. Using pastry brush, coat skewers with remaining olive-oil mixture.
3. Grill or broil skewers 11 min. or until thermometer inserted in meat reads 145°F for medium-rare, turning frequently.
