You carefully breaded your chicken cutlets, only to watch half the crumbs fall off in the skillet. Next time, swap your regular egg wash of eggs or eggs and milk for a blend of flour and egg whites (1 Tbs. of flour for each egg white). Dip the cutlets in the egg mixture before coating in crumbs. This glue-like substance will help the breading adhere firmly to the meat for perfectly breaded chicken. So easy!
