3 Tbs. olive oil
1 Tbs. hickory grill seasoning rub, like McCormick GrillMates Cowboy Rub
1 Tbs. assorted chopped fresh herbs, such as rosemary, sage and/or thyme
2 cloves garlic, peeled and chopped
5–6 lb. boneless pork-loin roast
2. Season pork roast with salt and fresh ground black pepper. Brush herb mixture evenly over roast.
3. Place roast on coolest part of grill. Cover and grill 1 hr. or until thermometer inserted in roast reads 160°F. Let sit 15 min. before slicing. Arrange roast on serving platter over salad greens, if desired.
