2 Tbs. mayonnaise
2 Tbs.** cider vinegar**
2 Tbs. sugar
1 Tbs. prepared horseradish
2 tsp. *Cajun seasoning mix, *like Emeril’s
1 tsp. Dijon mustard
1/4 cup chopped red onions
1/4 cup chopped fresh parsley
3 cups shredded green cabbage
3 cups shredded red cabbage
1/2 cup sliced yellow peppers
1/4 cup sliced radishes
1/4 cup shredded carrots
In large bowl, whisk together mayonnaise, cider vinegar, sugar, horseradish, Cajun seasoning and Dijon mustard.
Stir in red onions and parsley. Season with salt and ground black pepper to taste.
Add red and green cabbage, yellow peppers, radishes and carrots; toss gently to coat. Cover; chill1 hr., or until ready to serve.
