This mini Mexican-style casserole is quick, easy and ready to serve as soon as it pops out of the oven!
1 onion, _chopped _
1 small sweet potato, peeled and shredded
2 tsp. minced *garlic *
2 Tbs. canola *oil *
1 1/4 lbs. ground beef
1 can (21 oz.) Texas ranch–flavored black beans, like Bush’s Grillin’ Beans
1 cup chunky *salsa *
1/2 cup corn
1/4 cup chopped fresh *cilantro *
2 1/2 cups corn chips, like Fritos, divided
1 1/2 cups shredded *cheddar cheese *
1 cup sour cream
4. Divide beef mixture evenly among ramekins; sprinkle with cheddar cheese. Bake 20 min. Top with sour cream.
