If you're anything like us, you've got more than a few leftover hard-boiled Easter eggs in your fridge. To use them up in a delicous way, try this easy sandwich.
Here’s the tasty recipe:
6 thin slices white sandwich bread, like Pepperidge Farm Very Thin
1⁄3 cup prepared spicy or home-style guacamole
4 Boston lettuce leaves
4 strips cooked bacon
4 sprigs fresh dill (optional)
2** hard-boiled eggs, **sliced
1** drained roasted pepper, **sliced
Spread 2 slices of bread with guacamole. Top with lettuce, bacon and half the dill. Add 1 slice of bread to each. Top with egg, roasted peppers and remaining dill; sprinkle with lemon-pepper seasoning. Top with remaining bread.
