Make This Dairy-Free French Toast Casserole Recipe for Your Next Sunday Brunch

Coating brioche in a silky-sweet custard makes for a tasty one-pan dish!

Who can say no to a cozy Sunday brunch at home? And now, we’re giving it a healthy spin with this dairy-free French toast casserole recipe. For all you vegans out there, this dish is for you! Plus, it comes together in one baking dish in under an hour (or try our recipe for Air Fryer French Toast!).

We took fluffy brioche bread and bathed it in a creamy almond milk custard. A versatile and healthy alternative to dairy milk, it has a ton of vitamin A, D and E, as well as calcium. We also topped our casserole with some chopped dates and brown sugar before baking. Similar to raisins, dates have a deep sweet flavor and a soft chewy texture that pairs well with brioche. Ingredients

  • 2 cups unsweetened almond milk, such as Silk
  • 4 eggs
  • 1 tsp. ground cinnamon
  • 10 slices brioche bread, halved crosswise, from 1-lb., 4-oz. pkg.
  • ½ cup dates, chopped
  • ¼ cup brown sugar

Heat oven to 350°F. Coat a 13”×9” baking dish with cooking spray. In a bowl, whisk together almond milk, eggs and cinnamon until combined. 

Arrange brioche slices in baking dish, overlapping about halfway. Reserve ½ cup custard. Pour remaining custard over bread; let stand 10 min.

 

Top bread with reserved custard, chopped dates and brown sugar. Bake, uncovered, until set in center and browned on top, 30-35 min.
