Our Easy Honey-Granola Baked Apples Recipe is Sweet and Delicious

When fall approaches and you’re craving something sweet, our warm baked apples really hit the spot. Made with good-for-you ingredients like healthy pecans, antioxidant-rich honey, fiber-filled granola and energizing coconut in the filling, plus the apples, which have been shown to boost immunity and detoxify the liver among other things, this is a treat with some serious perks! And it’s delicious and immensely satisfying, too. What more could you ask for?

Our baked apples prep up in just 20 minutes. You can assemble them and pop them in the oven before dinner, and within 45 minutes, you’ve got the perfect dessert. You can even serve them with a scoop of vanilla ice cream on top!

The Simple Secret To Coring Apples

When coring the apples for this tasty fall treat, you want to preserve as much of the apple itself as possible. Removing the core with a knife can cut away too much of the flesh. That’s why we like to use an apple corer. Start by twisting the corer into the top of the apple p and keep twisting as you push through the center of the fruit — the motion makes it a breeze to remove the core in one piece!

Ingredients

  • 6 apples, such as Braeburn, cored
  • 1½ cups honey granola
  • ⅓ cup desiccated coconut
  • ⅓ cup butter, at room temp.
  • 1 tsp. grated lemon zest
  • ⅓ cup pecan halves
  • 2 Tbs. honey

Instructions

Heat oven to 350°F. Trim ⅓" from apple tops and bottoms. Transfer to baking dish. In bowl, mix next 4 ingredients; spoon into apples. Add pecans and apple tops. Cover with foil. Bake 50 min. Drizzle with honey.
