Roasted red pepper adds a burst of flavor to this quick and simple soup that’s just right when your’e looking for cozy romance
1 onion, peeled and chopped
2 Tbs. unsalted butter
2 large roasted red peppers, diced
1 jar (24 oz.) marinara sauce
1 cup chicken broth
1/2 cup sour cream
1. In saucepot over medium heat, cook onions in butter 5 min. or until tender. Add peppers. Cook 2 min.
2. Add tomato sauce and broth. Let simmer 8 min. In blender, puree mixture in batches until smooth; return to saucepot. Cook 2 min.
3. In bowl, blend sour cream and 1/2 Tbs. water, adding additional water if needed; spoon into resealable plastic bag. Close bag and snip corner; pipe hearts on soup and serve.
