Turkey Caprese Sandwich

Loading this sandwich with flavor couldn’t be easier, thanks to bottled dressing, jarred peppers and leftover turkey.

  • ¼ cup balsamic vinaigrette
  • 1 clove garlic, minced
  • 1 (16 oz.) ciabatta bread, halved horizontally 
  • 3 plum tomatoes, sliced
  • 3 cups sliced cooked turkey breast 
  • 11⁄2 cups fresh basil leaves
  • 2 jarred roasted red peppers, well drained
  • 1 (8 oz.) pkg. fresh mozzarella cheese, sliced


  1. In small bowl, combine vinaigrette and garlic. Place bottom piece of bread on large piece of plastic wrap. Brush cut sides of bread with vinaigrette mixture. 
  2. Layer bottom of bread with tomato slices, turkey, half the basil, roasted peppers, mozzarella slices and remaining basil. Cover with bread top. Wrap tightly in plastic wrap; place on cookie sheet. Top with another sheet and weigh down with books, cans or heavy pans.. Chill in refrigerator at least 4 hrs. or overnight. Cut sandwich into quarters and serve cold or at room temp.
