Turkey, Brie and Beets Sandwiches

These no-fuss turkey sandwiches, made on satisfying multigrain rolls, can be assembled in just 15 minutes.

  • ⅓ cup grainy mustard
  • ¼ cup light mayonnaise
  • 4 large multigrain rolls, halved horizontally
  • 1 cup well-drained sliced canned beets
  • ¾ lb. sliced cooked turkey breast or deli turkey
  • 8 thin slices Brie cheese (about 4 oz.)
  • 2 cups radish sprouts


  1. In small bowl, stir together mustard and mayonnaise. Evenly spread cut sides of rolls with mixture.
  2. Layer beet slices, turkey, Brie and radish sprouts on bottoms of rolls, dividing evenly. Cover with tops of rolls. Wrap tightly in plastic wrap; place on cookie sheet. Top with another sheet and weigh down with books, cans or heavy pans.. Chill in refrigerator at least 4 hrs. or overnight. Serve sandwiches cold or at room temp.
