This Tangy Peach Salad Recipe Is Irresistible With Caramelized Fruity Flavor

Sweet peaches, toasted croutons, savory cheese and zesty dressing combine to create a delicious dish

Fresh fruit hot off the grill is one of our favorite summer treats. We love the caramelized flavor that’s created when the fruit cooks over the flames. Put that grilled fruit in a salad with a tangy vinaigrette and you’ve got the perfect balance of sweet and zesty! The beauty of this Tangy Peach salad recipe, is that you can grill the peaches or not, depending how much time you have, and then toss the fruit with pieces of toasted sourdough bread and crisp greens. Top with feta cheese and pine nuts for a mash-up of flavors and textures. Give it a try and comment below. 

Quick tip: When you’re making a summer salad, It’s easy to make bottled dressing taste like homemade. Simply whirl it in the blender with some jarred pesto and shallots: Use ¼ cup oil-and-vinegar dressing, 2 Tbs. jarred pesto sauce, 1 small shallot (peeled and diced) and ¼ tsp. salt.

  • 3 peaches
  • 2 slices sourdough bread, toasted
  • 2 oz. feta cheese
  • 8 cups baby mixed greens
  • 1/4 cup oil-and-vinegar dressing
  • Pine nuts and fresh basil (optional)

Instructions

• Pit peaches, then cut into wedges. Tear sourdough bread slices into bite-size pieces. Crumble feta cheese. If desired, rinse baby mixed greens and pat dry with clean kitchen towel or paper towels.

• Place baby mixed greens in large serving bowl. Top with peach wedges, sourdough bread pieces and crumbled feta cheese. Drizzle with oil-and-vinegar dressing. If desired, garnish with pine nuts and fresh basil.
