Easy Rosemary-Honey Pancake Stacks Recipe Makes a Savory-Sweet Treat

Our test kitchen manager, Susan Chiusano came up with this Rosemary-Honey Pancake Stacks recipe for a deliciously-easy dessert any day of the week.

Susan’s rosemary-infused honey really makes this dish shine. And it’s super-simple to make. First, thin the honey slightly with a bit of water, add a few rosemary sprigs, and let it simmer until the flavors blend. The savory herb perfectly complements the sweetness of the honey. Next, Susan griddles the pancakes into mini rounds. Then she layers them with fruity jam, stacks ’em up and drizzles with the honey mixture. It’s like having an individual layer cake all to yourself! Whether you make them for breakfast, brunch or dessert, these delightful treats are sure to satisfy any sweet tooth!

Ingredients

  • ½ cup honey
  • 2 sprigs fresh rosemary
  • 2 cups pancake & baking mix
  • 2 eggs
  • ½ cup milk
  • ¼ cup sour cream
  • ¼ cup blueberry preserves

Instructions

In pot, mix honey, 1 Tbs. water and rosemary. Over medium heat, cook, stirring, until flavors blend, about 3 min. Transfer to bowl; let cool. Strain.

In bowl, stir together pancake mix, eggs, milk and sour cream. Coat nonstick skillet with cooking spray. Heat over medium-low. Drop in pancake batter by 2 tablespoonfuls. Cook until set along edge, 2 min.; flip. Cook until golden, 2–3 min. Repeat with remaining batter. Layer pancakes with preserves. Drizzle with rosemary-honey.
