Ingredients

  • 2 nectarines
  • 1 lime
  • 3 Tbs. finely diced radishes
  • 2 Tbs. sliced scallions
  • 1 Tbs. chopped mint
  • 6 (¾ ” thick) bone-in pork loin rib chops, 3 lbs.
  • 3 Tbs. applewood grill seasoning rub, such as McCormick
  • ¼ cup steak & chop marinade, such as Lawry's

Instructions

Prepare grill for medium direct-heat cooking. Remove pit from nectarines; dice. Squeeze 1 Tbs. juice from lime. In medium bowl, combine nectarines, lime juice, radishes, scallions and mint; toss until fully combined. Cover; reserve.

Coat both sides of pork chops with cooking spray; sprinkle with apple-wood seasoning rub. Grill, flipping once, until slightly pink near bones, 6–9 min. per side. Remove from grill; brush with marinade. Serve topped with nectarine mixture.
