Easy Herbed Pork Roast Recipe Cooks Up Full of Flavor

When you’re preparing a meal for a crowd, a pork loin roast can be a show-stopping centerpiece. To give it flavor and help hold in the juices, our recipe uses mayonnaise and mustard! We combine them in equal parts and spread the mixture onto the pork. It helps the the seasonings stay put and traps moisture in the meat. Next, we sprinkle on McCormick’s Perfect Pinch Tuscan Rosemary & Sun-Dried Tomato Seasoning blend, and then pop the roast in the oven. Your guests will never guess it all came together with only five ingredients and just 10 minutes of prep time. 

Hot-Pepper Pork Roast

Looking to spice up your roast a bit? Simply omit the mayonnaise and mustard, coat the pork in olive oil, sprinkle on the seasoning blend, and during the last 10 minutes of roasting, brush the meat with hot red pepper jelly. 

Apricot-Thyme Pork Roast

To add sweetness, skip the mustard, mayonnaise, seasoning blend and parsley. Instead, coat the meat in olive oil and sprinkle it with dried thyme. Roast the pork as usual, brushing it with apricot jam during the last 10 minutes of cooking.

Ingredients

  • 1 Tbs. Dijon mustard
  • 1 Tbs. mayonnaise
  • 2 tsp. dried herb seasoning, such as McCormick Perfect Pinch Tuscan Rosemary & Sun-Dried Tomato Seasoning
  • 1 tsp. chopped fresh parsley
  • 2 lb. boneless pork loin roast

Instructions

Heat oven to 350°F. In small bowl, combine mustard and mayonnaise. If necessary, thin with up to 2 tsp. water to make spreadable. In another small bowl, combine seasoning and parsley.

Spread mayonnaise mixture over pork; sprinkle with seasoning mixture. Place pork in roasting pan. Roast pork until meat thermometer inserted into center of pork registers 145°F, 1 hr.–1 hr., 10 min. Transfer to cutting board. Let pork stand 5 min. before slicing. Garnish as desired.
