Apple Cider Braised Pork Roast

A savory cider sauce lends this main layers of flavor that are impressive enough to anchor a special meal yet easy enough for a weeknight.

Ingredients

  • 1½ lbs. boneless pork butt
  • 1 onion, thinly sliced
  • 4 cups apple cider
  • ¼ cup apple cider vinegar
  • 1 tsp. dried oregano
  • 1 tsp. dried rosemary

Instructions

  1. Place pork and onions in 6 qt. slow cooker. Pour in apple cider. In small bowl, whisk apple cider vinegar with herbs and salt and pepper to taste. Pour over pork. Cook on low heat 6 to 8 hrs.
  2. Transfer pork to platter; let sit 30 min. Slice; serve with braised onions and cider sauce, if desired.
