Icy Cold And Refreshing Strawberry-Basil Granita Recipe Makes An Easy Summertime Treat

Granita is a classic semi-frozen dessert that originated in Sicily. It’s simply a mixture of fresh fruit, juice and sugar that’s popped in the freezer then scraped into crystals. It makes the ultimate refresher on warm summer days. Plus, you can customize it with your favorite flavors. Best of all, it’s dairy-free and lower in calories than ice cream, so you can enjoy almost guilt-free.

With only five ingredients, our Strawberry-Basil Granita recipe is a breeze to whip up. We simmer the herb with sugar and water to create a savory-sweet syrup. But mint or tarragon would also be delicious. Then all that’s left to do is blend berries, lemon juice and the syrup in a blender, transfer to a pan and freeze. Ingredients

  • ½ cup sugar
  • ½ cup fresh basil leaves + additional small leaves
  • 1 (16 oz.) pkg. strawberries, trimmed, quartered
  • 1½ tsp. grated lemon zest
  • 2 Tbs. fresh lemon juice

Instructions

In pot, mix sugar, 1⁄2 cup water and 1⁄2 cup basil; over medium heat, bring to a boil. Cook until sugar dissolves, 1-2 min. Transfer to bowl; let cool. Strain; discard basil leaves. In food processor, combine strawberries, lemon zest and juice; process until smooth. Stir in cooled basil syrup. Pour into freezer-proof 8" square pan. Cover; freeze until solid, about 8 hrs. Using fork, scrape frozen mixture into flakes. Divide granita evenly among 4 dessert glasses or bowls. Garnish with additional basil.
