Peanut Butter Cookie ’Wiches

Pudding mix is the easy secret that guarantees these cookies bake up moist and tender.

Ingredients

  • 1½ cups honey roast peanut butter, divided
  • ¼ cup, plus 3 Tbs. butter, at room temp. and divided
  • ¾ cup rolled Kamut, oats or barley
  • 2 (3.4 oz.) pkgs. instant vanilla pudding mix
  • ½ tsp. baking soda
  • 2 large eggs
  • ⅔ cup powdered sugar
  • 1½ tsp. milk

Instructions

  1. With mixer on medium speed, beat 1 cup peanut butter and ¼ cup butter 1 min. Beat in Kamut, pudding mix, baking soda and eggs. Roll into 36 balls; arrange on lined pans. Flatten to ¼” thickness. Bake at 350°F for 8 min. Cool.
  2. With mixer on medium, beat sugar, milk and remaining peanut butter and butter 30 sec.; spread between cookies.
