Easy and Refreshing Minty Pineapple-Lime Ice Pops Recipe Helps Beat the Heat

Frozen treats have always been a sweet way to cool off on hot summer days. In fact, fruit-flavored shaved ices have been around for centuries. But the first ice pop is accredited to Frank Epperson who, in 1905 at age 11, left a glass of powdered lemonade soda water with a mixing stick in it on his porch on a cold night. He awoke the next morning to find a frozen treat-on-a-stick and the ice pop was born. Surprise — a lucky boy invented ice pops!

Of course, today ice pops come in all sorts of flavors, and you can buy them in the freezer section at your local grocery store. But it’s so much more satisfying to make them yourself. A few ingredients are all you need and they’re quick to prep. Best of all, you can customize them with a virtually endless combination of fun flavors. You can use your favorite fruit juice, frozen fruit, fresh herbs and any sweetener you like. And for creamy pops, coconut milk makes a great base. Our Minty Pineapple-Lime Ice Pops recipe starts with canned pineapple juice, fresh lime juice and sugar. Simply cook the mixture until the sugar dissolves, then stir in chopped fresh mint. Next, pour into ice pop molds and freeze. Then all that’s left to do is to sit back, relax and chill.

Ingredients

  • 4 limes
  • ⅓ cup pineapple juice
  • 2 Tbs. sugar
  • ½ cup chopped fresh mint
  • 4 ice pop sticks

Instructions

Squeeze 1⁄4 cup juice from limes. In pot, combine pineapple juice, sugar, lime juice and 2⁄3 cup water; over medium heat, cook until sugar dissolves, about 2 min. Let cool. Stir in chopped mint. Dividing evenly, pour pineapple mixture into 4 (1⁄3 cup each) ice pop molds; cover. Insert ice pop sticks. Freeze until solid, about 4 hrs. Run molds under warm water to release pops, about 10 sec. Serve immediately.
