Chocolate-Mint Cookies

Adding fiber-rich teff flour to the cookie batter gives these treats a healthy boost.

Ingredients

  • 3½ cups chocolate chips, divided
  • 6 Tbs. salted butter
  • ½ cup brown sugar
  • ½ tsp. peppermint extract
  • 1 large egg   
  • ½ cup Kamut flour
  • 6 Tbs. teff flour
  • 1½ Tbs. cocoa powder
  • 1 tsp. baking soda
  • 2½ tsp. vegetable oil

Instructions

  1. Melt ½ cup chocolate; cool. With mixer on medium speed, beat butter and sugar 1 min. Beat in peppermint and egg. Beat in melted chocolate, flours, cocoa and baking soda 1 min. Chill 30 min.
  2. Shape 1½ tsp. portions into balls; arrange on lined baking sheets. Bake at 350°F for 6 to 8 min. Cool. Melt 3 cups chocolate; stir in oil. Dip cookies in chocolate to coat. Place on rack; let sit 15 min. or until set.
