Active Time:

20 min.

Total Time:

40 min.

  • ½ cup low-fat ricotta cheese
  • ¼ cup grated Parmesan cheese
  • 1 large egg
  • 2 tsp. Italian seasoning
  • 2 cups diced leftover cooked turkey
  • 1 cup leftover green bean casserole or creamed spinach
  • 1 cup diced roasted red peppers
  • 1 (11 oz.) pkg. refrigerated thin-crust pizza crust
  • 1 cup shredded low-fat mozzarella cheese
  • 1 cup prepared pasta sauce

  1. Heat oven to 425°F. In bowl, blend first 4 ingredients. Stir in next 3 ingredients. Unroll pizza crust on lined baking sheet.
  2. Top with turkey mixture and mozzarella, leaving 2″ border; roll and fold to enclose. Or for design, spread toppings in 4″-wide row lengthwise down center of dough. Cut ¾”-wide dough strips on either side of filling. Fold dough slightly over filling at ends; weave strips over filling. Bake 20 min. or until done. Serve with sauce for dipping.
