Some sandwiches are just destined to be dinner worthy. And this jerk chicken sandwiches recipe is definitely one of them! Not only are they delicious, they’re super easy to make. Chicken breasts are coated with spicy and sweet jerk seasoning and then grilled to juicy perfection. Next, place chicken pieces on sesame buns, top them with luscious grilled pineapple, and add some Swiss cheese for melty goodness, plus lettuce and onion for crunch and zest. Enjoy these sandwiches on a weeknight, or make them at your next cookout or picnic!

For the perfect complement to the jerk chicken sandwiches — and a tasty summer side — try this quick macaroni salad: Whisk together 3⁄4 cup mayonnaise, 1 Tbs. red wine vinegar, 1 Tbs. sugar, 2 tsp. Dijon and 1⁄4 tsp. salt. Fold in 12 oz. elbow macaroni (cooked and drained), 1⁄2 cup diced tomatoes, 1 sliced shallot, 1⁄3 cup peas and 2 Tbs. chopped chives.

Ingredients

  • ½  cup mayonnaise
  • 1 ½tsp. dry jerk seasoning
  • 4 thinly-sliced boneless skinless chicken breast halves, 1 lb.
  • 3 tsp. olive oil
  • 4 (¼” thick) peeled, cored pineapple slices
  • 4 sesame seed buns
  • 8 thin slices Swiss cheese, 5 oz.
  • 2 cups mixed baby greens
  • ½ cup thinly sliced red onion

Instructions

Prepare grill for medium-high direct-heat cooking. Combine mayo and ½ tsp. jerk seasoning; reserve. In large bowl, toss chicken with 1 ½ tsp. oil and remaining 1 tsp. jerk seasoning. In separate bowl, toss pineapple with remaining 1 ½ tsp. oil.

Grill chicken until no longer pink in centers and pineapple until lightly browned, flipping once, 3–4 min. per side. Spread mayonnaise mixture over split side of sesame buns. Assemble with cheese, greens, chicken, pineapple and onion.
