Risotto is one of our favorite dishes, but it seems to always taste dry the next day. It turns out, if you want your leftover risotto to still taste rich and creamy, you have to learn how to reheat it properly. Luckily, all you need is some water and butter! See three surefire methods below.
In a Steamer Basket
According to Blue Apron, the absolute best way to reheat risotto is by steaming it. Since risotto can dry up quickly in the fridge, a steamer basket can freshen it into a luscious new meal. Simply bring a large pot of water to a boil, set your heat-safe bowl of your leftover risotto inside in a steamer basket, then cover and reduce heat to low. When your risotto is reheated, add your preferred amount of butter as a final step. While this process takes some time, the results are really worth it!
In the Microwave
Reheating risotto in the microwave is obviously a smart choice if you’re short on time — as many of us are these days. But unfortunately, this method can dry your delicious meal out. Water is the secret to preventing this problem. After you place your risotto in a microwave-safe bowl, put a few splashes of water on top (but don’t overload it to the point that it covers all the food). Microwave for about four minutes, keeping a close eye on your risotto, especially if you have a powerful microwave. You’ll want to add butter to bring out the creaminess of the dish somewhere around the three-minute mark. Simply stop the microwave, add your butter, and put it back in for one more minute. Mix it all together, and voilà! Reheated risotto in a pinch!

Put all your leftover risotto in a nonstick pan along with some water and butter, place the pan over low heat, and then start stirring once your risotto starts to boil, suggests Simply Healthy Family. The cool thing about this reheating method is that you can sub water for your favorite stock or even white wine. Heck, you might even feel compelled to add new spices or herbs to the mixture — go for it!
