  • Copper clad cookware: Copper clad isn’t really copper cookware. It has a layer of copper foil around the pan but doesn’t conduct heat like something with a copper base. The plus is it tends to be more affordable, and still gives that gorgeous, vintage look many of us are after. It can also be used for more types of ingredients, making it more versatile than stand alone copper.
  • Copper cookware: Cookware labeled as simply ‘copper cookware’ is made primarily of the material. These options have a metal lining for protection, and tend to be the most expensive of the cookware types.

What is the disadvantage of copper cookware?

The benefit of copper cookware is that it heats and distributes the heat fast. This makes it ideal for things like pancakes, quick cooking meats (seafood), and sauces — all this food talk is making me hungry!

Although gorgeous and great for your pan-seared Tilapia, it isn’t great for recipes with acidic ingredients. While most of the best copper cookware sets will be lined for protection, it still doesn’t hurt to use a stainless steel pot when recreating your grandmother’s marinara recipe.
