This easy southwestern chili soup recipe requires only 20 minutes of prep time. Let your slow cooker do all the hard work here!
- 1 1/2 lb ground beef
- 1 onion, chopped
- 1 (15 oz.) can kidney beans, rinsed and drained
- 1 (15 oz.) can tomato sauce
- 2 tbsp chili powder
- 1 (28 oz.) can crushed tomatoes
- 1 15 oz.) can corn, drained
- 2 tsp ground cumin
- 1 tsp dried oregano
- 1 tsp sugar
In large skillet over medium-high heat, cook beef and onions until beef is browned, stirring often; drain.
In 3 1⁄2−4-qt. slow cooker, combine all ingredients. Cover; cook on low 5−6 hrs. until mixture is thick and flavorful.
Health bonus: Ease belly bloat with corn. This fiber-rich veggie stimulates the output of a fatty acid that curbs the production of bloat-triggering gas in the GI tract.
