This keto mushroom recipe, courtesy of recipe developer Chelsea Cohen of SlimFast, proves that you don't have to give up all your favorite Passover foods just because you're on the keto diet.
- 1 tbsp SlimFast MCT Oil
- 1 tbsp butter
- 1 clove garlic, minced
- 8 oz white mushrooms, sliced
- 1 tbsp parsley, chopped
- 2 tbsp Parmesan cheese
- Salt and pepper to taste
Heat the SlimFast MCT oil and butter in a skillet over medium to high heat.
Add garlic and mushrooms to skillet and sauté for about 5 minutes, stirring occasionally making sure the mushrooms cook on both sides. Season with salt and pepper.
When the mushrooms are done to your likeness, remove from heat, sprinkle with the Parmesan cheese and parsley.
