Perfect for when life gets hectic, this hearty dinner cooks up in one pan and can be on the table in a speedy 30 minutes.
- 2 slices thick-cut bacon, cut into 1/2" pieces
- 2 (4 oz.) boneless pork chops, halved horizontally
- 2 tbsp unsalted butter
- 2 c diced potatoes
- 1/2 c chopped red onions
- 2 tsp chopped garlic
- 2 c diced tart apples
- 2 tbsp apple cider vinegar
- 2 tsp chopped chives
In skillet over medium-low, cook bacon until browned; move to edge of pan. Brown chops in fat 2–3 min. per side; transfer to plate. Add butter; when melted, stir in next 3 ingredients. Cook 5 min., stirring. Add apple and 1/2 tsp. salt; cook 5 min. Add cider; stir, scraping up brown bits.
Place chops over hash. Cover; cook 10 min. or until thickest part of chops is 145°F. Garnish with chives.
To give this dish an extra burst of bright flavor, we drizzled on a tangy honey-mustard sauce that takes just minutes to whip up. To make: In small bowl, whisk together 2 tbsp. Dijon mustard, 1 1/2 tbsp. honey, 1 1/2 tbsp. apple cider vinegar, 2 tbsp. apple cider, 1 minced garlic clove, and salt and pepper to taste. Cover; chill at least 30 minutes to allow flavors to meld.
