Packed with energizing potassium and mood-boosting antioxidants, these snow-kissed confections will have all your little cubs cheering for more.
- 2 ripe bananas, mashed
- 3/4 c honey, divided
- 1 tbsp vanilla extract
- 2 eggs
- 1/3 c coconut oil, melted
- 2 c whole-wheat flour
- 1 1/2 c unsweetened shredded coconut, divided
- 1 tbsp baking powder
- 8 oz cream cheese
- 1 c chocolate-covered raisins
- 12 small chocolate-covered wafers
Heat oven to 350 degrees Fahrenheit. In bowl, whisk together bananas, 1/2 cup honey, vanilla extract, eggs, and coconut oil. Add flour, one cup shredded coconut, and baking powder. Mix until fully incorporated. Divide bater evenly among 12 lined muffin wells. Bake 15 minutes or until done. Let cool.
Using electric mixer on high speed, beat cream cheese and remaining honey five minutes or until smooth. Frost muffin tops, the dip each one in remaining shredded coconut. Arrange five chocolate-covered raisins and one chocolate wafer on each to form paw print.
